Recently my son and I were talking about biscuits and I told him that I should make him some. He said “Oh, holding out on me, eh?”
He didn’t know that it was my job for a number of years. I worked in a Hardee’s in town that has now since closed.
Rise and Shine
I would arrive at work at 4:15 am or 4:30 am, I honestly can’t remember. All I remember is that we opened at 5:00 am. We would have customers at that time.
When I arrived I needed to at least have one pan made and ready to go. We also had fresh eggs, buttermilk and other ingredients for breakfast. In the later years that I worked there everything to make the biscuits was in one pouch that would be added to the flour and milk. Made it easier, but I don’t think they ever tasted as good.
Covered in Flour
I never could keep the station perfectly clean and the flour off of me. The table that we used to roll the biscuits out on came about to my waist. I’d have to lean over it to roll them out, and cut them. I’d be covered in flour from head to toe. I was able to feel with my hands when the dough was right and how they should look.
Believe it or not, customers would be picky about how their biscuits looked and would order them special. That though is another post for another day. I could write volumes on what people ordered and how they acted towards the employees where I have worked, but that might cause you to lose your faith in humanity.
Working in Service
Maybe it planted a love of baking in me. I got used to doing it and would swear at that time that I didn’t really enjoy the job. Life was a lot easier then. Although, I don’t think I could handle those early hours as I did when I was younger.
Working in the restaurants changed my life, for better or for worse, I can’t say for sure. It did change the way that I look at people and I think people in the service industry don’t always get a fair shake.
Maybe I will make him some biscuits soon, just won’t do it at 4:00 am.
